Cupcakes. They're small, cute, irresistible & more often than not represent the first foray into the world of baking both for kids & grown-ups alike. However, don't let their diminutive size fool you into thinking that they're any less of a technical bake than their "full-sized" counterparts. In fact, in some ways they're more difficult; follow these 3 tips to tread the path to cupcake glory.

  1. AN ICE CREAM SCOOP IS YOUR FRIEND. Use one to fill the cases with batter. It's a lot easier than trying to use a wooden spoon & will help you to get exactly the same amount of batter in each case. You'll see why this is so important when you read point two...
  2. THINK SECONDS NOT MINUTES. With most "full-size" cakes there's a sweet spot of a few minutes where a cake is perfectly baked, giving you a light fluffy sponge, not a gooey mess or a rock cake. With Cupcakes, because they're so much smaller this "sweet spot" can go by in mere seconds not minutes. Their tiny size makes them VERY easy to over-bake. If your weights on individual cakes are different you might actually struggle to cook some properly without burning the lighter ones. So pay very close attention to your timings, every second counts...
  3. JUST BEAT IT. If your recipe calls for creaming the butter & the sugar don't skimp on the beating you dish out to both these ingredients. Light & fluffy is the order of the day for sponge texture & you'll only get this if you beat the mixture until it's really light & almost off white in colour.
